Ingredients

  • 1 ½ cups raw shelled walnuts
  • 2 cups roughly chopped white button mushrooms
  • 1 tsp ground cumin
  • 1 ½ tsp chili powder
  • 1 garlic clove, minced

  • 1 tbsp fresh lime juice
  • 2 tbsp olive oil, for cooking

For serving

  • 6-inch corn tortillas
  • Lettuce
  • Salsa
  • Guacamole
  • Black or pinto beans

Directions

  1. Combine walnuts, mushrooms, cumin, chili powder, garlic, soy sauce and lime juice in a food processor. Pulse to break up walnuts and mushrooms into small crumbles.
