FOX4: FAME: Walnut "Meat" Tacos

Grace Hoffman, Nutritional Coordinator with Saint Luke's Mid America Heart Institute and the Food As Medicine Everyday (FAME) program, shares a healthy meat-free taco recipe with the FOX4 morning show.
Ingredients
- 1 ½ cups raw shelled walnuts
- 2 cups roughly chopped white button mushrooms
- 1 tsp ground cumin
- 1 ½ tsp chili powder
- 1 garlic clove, minced
- 1 ½ tbsp low sodium soy sauce or coconut aminos
- 1 tbsp fresh lime juice
- 2 tbsp olive oil, for cooking
For serving
- 6-inch corn tortillas
- Lettuce
- Salsa
- Guacamole
- Black or pinto beans
Directions
- Combine walnuts, mushrooms, cumin, chili powder, garlic, soy sauce and lime juice in a food processor. Pulse to break up walnuts and mushrooms into small crumbles.
- Heat olive oil over medium-low heat in a skillet. Add walnut mixture and cook, stirring occasionally for 7-8 minutes, until mushrooms are tender.
- Serve on tortilla with desired toppings. Enjoy!
